Zucchini Breakfast Bake

One of the easiest and least expensive meals I can make this time of the year is Zucchini Breakfast Bake. 

 

First start with 4 cups of cubed zucchini.  Fill a large pot 2/3 full of water, and once it reaches boiling add the zucchini, and set a timer for 5 minutes, and preheat your oven to 375 degrees.

 

While that is boiling, grab your other ingredients:

6 eggs

3/4 cup of milk

2 cups of shredded cheddar

Parmesan cheese

Garlic Pepper

and whatever meat you may want to add is optional, we usually use breakfast sausage (it’s inexpensive and easy to work with).

You will need a 9″ x 11″ glass casserole container, and spray with non-stick cooking spray.

When the timer goes off for the zucchini, I drain it and place it in the casserole dish.

Then I will take the browned meat, and place it evenly over the zucchini.

In a medium to large bowl I mix together the milk, eggs, Parmesan, garlic pepper, and half of the shredded cheddar cheese.

Pour the mixture over the top of the zucchini and , and then sprinkle the top with the remaining cheddar cheese.

Bake for approximately 30-35 minutes or until the cheese is golden brown. Then, take a knife and poke it in the middle of the casserole. If it comes out clean without any liquid, you are good to go!

Cut into squares and serve up.
