
Strawberry Poke Cake
Strawberry shortcake has met its match! This is a wonderful recipe for a Strawberry Poke Cake, a perfect seasonal dessert (or anytime really). It is a pretty simple recipe, and it can be modified to your taste. I hope you try it, and love it as much as my family does!
You will need these ingredients for the cake:
White or yellow cake mix
3 eggs
1/3 Cup Butter
1 cup water
1/2 cup sliced strawberries (frozen work fine too)
Directions for the cake:
Pre-heat your oven to 350 degrees
Mix the eggs,water, and butter together
Slowly add in the cake mix followed by the strawberries
Spray a 9×13 glass baking dish with cooking spray and pour the batter in the dish
Bake approximately 35 minutes or until knife/toothpick comes out clean
Once the cake is done, poke the cake with a straw.
Ingredients for topping:
8 oz. of cool whip
4 cups powdered sugar
2 small boxes of cheesecake instant pudding mix
1 cup of milk (a little more or less depending on your desired consistency)
1-8 oz package of cream cheese softened
1 stick of butter softened
Mix together the butter and cream cheese, then slowly add the powdered sugar followed by the pudding mix. Once mixed well, add the cool whip, and slowly add the milk, until you reach your desired consistency (mine was 1 cup). You want it to be able to soak into the “poked holes” you made, but you don’t want it to turn your cake into mush. See the pictures for an example of the consistency you are looking for. I added a little strawberry on top as well. Feel free to add whole strawberries, or leave it without any garnishment (either way, you will not be disappointed).
Refrigerate the cake for 3-4 hours, and enjoy!
